Decaffeination is the process of removing most of the caffeine from green (unroasted) coffee beans—typically about 97% or more.
That means an 8 oz cup of decaf still has a small trace of caffeine, usually around 2–5 mg, but nothing close to the 80–120 mg you’d find in regular coffee. You get the coffee experience—aroma, comfort, ritual—without the buzz.
But here’s the catch: how the caffeine is removed really matters, especially if you care about taste or want to avoid synthetic chemicals.
1. Swiss Water Process (Chemical-Free)
Uses only pure water, temperature, and time to remove caffeine

2. Carbon Dioxide (CO₂) Process
Uses liquid CO₂ under high pressure to draw out caffeine
Considered clean and safe, but rarely used in certified organic coffee
Preserves flavor well, though it’s more expensive to produce
3. Methylene Chloride Method
Involves a chemical solvent that binds to and removes caffeine
FDA-regulated and technically “safe,” but not popular among clean-eating folks
Common in conventional brands—not allowed in organic-certified products

4. Ethyl Acetate Method
Uses a naturally derived solvent (often from fruit or sugarcane)
Marketed as “naturally decaffeinated,” but it’s still a solvent-based method
Not used in organic decaf, and it can sometimes impact flavor
